Balsamic Marinated Steak:
12 (6 oz each) Carve Premium Ontario Beef AAA – Striploins
1/2 cup (4 oz) balsamic vinegar
1/4 cup (2 oz) olive oil
1 tbsp (0.5 oz) brown sugar
4 cloves garlic, minced (1 oz)
4 tsp (1 oz) salt
4 tsp (0.5 oz) pepper
Chipotle Aioli:
1 cup (8 oz) mayonnaise
1/4 cup (4 oz) puréed canned chipotles in adobo sauce (about 8 chipotles)
2 tbsp (1 oz) lime juice
1/2 tsp (0.1 oz) salt
Assembly:
12 ciabatta buns, split and toasted to order
6 cups (4.8 oz) arugula
3 cups (12 oz) caramelized onions
12 slices (15 oz) Gruyère cheese
Fries or house salad, for serving
• Use prepared caramelized onions, or slowly cook sliced onions over medium-low heat for 25 to 35 minutes in butter or until dark brown, tender and caramelized.
• For even cooking, start steak at room temperature.
